Pitkin County Pork Chops
Ingredients (6 servings)

2 tb Butter
1/2 c Chopped onion
3 Cloves garlic, minced
1 ts Salt
1/4 c Prepared mustard
1/4 ts Cayenne pepper
2 tb Cider vinegar
2 tb Packed light brown sugar
2 tb Worcestershire sauce
6 Pork chops 1-1/2 inches thick
1 c Ketchup
1/2 c Maple syrup
1/3 c Water
Instructions

In a small bowl, combine butter, onion, garlic, salt, mustard, cayenne pepper, vinegar, brown sugar and Worcestershire to make a paste. Spread over pork chops. Place in large baking dish and broil close to heat for 5 minutes. Remove from oven. In small bowl, combine ketchup, maple syrup and water; blend well. Pour sauce over chops. Cover and bake at 350 degrees for
1 hour or until pork is tender. A tantalizing mixture of sweet, sour and
spice.

We have also mixed all the ingredients together with shredded leftover turkey (cooked) and heated through in a crock pot for turkey bar-b-que sandwiches. Both ways are worth trying.
