Chicken Bread

Ingredients

2 Chicken Breasts; cut into small chunks
1 cup Carrots; cut into small chunks
1 Onion; cut into small chunks
4 stalks Celery; cut into small chunks
3 cups Bisquick
1 cup Sugar
1 cup Beer
1 cup Milk
Garlic powder
Basil
Poultry Seasoning
Parmesan cheese; grated

Instructions

Lightly brown Chicken chunks, then keep warm over low heat. Toss together Carrots, Onion, and Celery in a large mixing bowl. Add Bisquick, sugar,and the seasonings to mixing bowl, blend. Gradually add Beer and then Milk to mixing bowl while stirring. When the batter is blended thoroughly, mix in the chicken chunks. Pour mixture into a 9" X 13" greased baking pan. Level mixture and sprinkle the top with Parmesan Cheese. Bake 45-55 minutes at 350° F.

Notes

I wanted to make something different several years ago, but none of the recipes I found, sounded appetizing. I just started tossing things in a bowl. By the way, I rarily measure anything, especially seasonings. I had a lot of fun with this one, because if you don't know what you're making, how can you tell when it's done? "Grin" I like to make this infrequently, so that I don't quite remember what I used; an adventure every time! But when I made it last week, I did pay attention to what I was doing, with adding the recipe to the web site as the goal.

Hints

If you use a full can of beer, the Bread has a strong yeasty flavor.
At times I've added some White Wine, with the Beer and Milk.
The batter when mixed should be as thin as pancake batter. I adjust by adding either more Bisquick or milk.
I've always used mostly Bisquick, but I have at times added some flour,(when I didn't have enough Bisquick.)
This will rise while baking, especially if you use too much beer.
Do you need to ask "What do you do with the rest of the Beer?"
When done, the top will be brown, but when poked, it will stick to a fork or knife.
When describing this to friends, they have asked about a sauce or gravy. I've never used one with this dish, even the leftovers stay very moist inside.
