THUMB PRINTS


(I usually double this recipe!)

   1 cup butter or margarine
   1 4 ½ oz. pkg. sugar-free instant pudding mix (any flavor)
   1 egg
   2 cups flour
   3 T. sugar 

(You may leave the sugar out and sprinkle a little 
sugar on top before you bake them or afterwards, or you may 
leave it out altogether and sprinkle a little Equal on them 
when they are baked.)

1. Heat oven to 325. 2. Cream butter and pudding mix until light and fluffy. 3. Beat in egg. 4. Add flour gradually until dough forms (You may have to use your hands to mix it.) 5. Shape dough into 1 -inch balls. 6. Place balls on ungreased cookie sheet. Make thumb print in center of each. (Use a fork to flatten them out like a peanut butter cookie, if your family does not like any of the fillings you might use in the thumb print.) 7. Bake at 325 for about 12 or 13 minutes or until firm. Watch out - the bottoms get done really fast. 8. Cool and decorate the centers with sugar-free jelly or jam, Cool Whip Lite, or something else that your family enjoys.
